Recipes: Real Men Do Eat Quiche

quichebaby.gifDoes anyone find it strange that pizza took off, available anywhere and everywhere, but quiche didn’t? We suppose it’s got to do with the egg content. Imagine instead of ordering a couple pizzas for the ‘big game,’ people started getting spinach and bacon quiches? Imagine instead of Pizza Pizza, it was Quiche Quiche?
Every Sunday, just before the weekly Desperate Housewives party, Torontoist scours the pantry for quick, cheap, creative dish to match the programming. This week, to serve about four guests (about four = they eat a lot), Torontoist tried out a great meat-free source of protein and amicable party food, quiche.


Ingredients:
short crust pastry
1 egg white
some cream
3 eggs, lightly beaten
lots of cheese of your choice
salt, freshly milled black pepper
Directions:
Roll out the shortcrust pastry – we used the Pillsbury variety – and spread it over a greased pie plate, forming a double layer around the sides. Prick the pastry base and sides with a fork. Brush the pastry with the egg white and allow to rest in the refrigerator for 5-7 minutes.
During that 5-7 minutes, combine cream, eggs, cheese and seasonings in a bowl. Pour that solution into the pastry case. You could add some more cheese on top (very seductive), or just lay bacon strips over it. Bake the quiche in a pre-heated oven at 220°C, 425°F, for 20-30 minutes. Cajolling is recommended, but not necessary.
