The dish: chicken (raised on the farm, of course) on makbouba with herb tomato focaccia. In a reversal of the rest of the outdoor installations, created by landscape artist Jean Paul Ganem for Stadtländer, this one was created by Stadtländer for Ganem. Makbouba is a Turkish cooked vegetable salad, and Ganem’s favourite. (Though it’s what you might expect us to report, it is no less true for all that: the fresh cherry tomato that came with the dish was the single best tomato we’ve ever eaten.)
